Ingredients you’ll need to make a Vegan Thai Curry Paste:

- 50g small (Thai) red onion, peeled whole

- 40g garlic, peeled whole 

- 1 large lemon grass, reedy outer skin removed and sliced

- 20g galangal, peeled and sliced

- 1 tsp kaffir lime zest (avoid white area)

- 10g small fresh turmeric, peeled and sliced          

- 25g small sun dried red chilli, soak in water then chopped into 1 cm / 0.5" pieces seeds shaken out

- 7 sun dried long red chilli, soak in water then chopped into 1 cm / 0.5" pieces seeds shaken out 

- 1 tbsp chopped coriander roots

- 1 tsp pepper whole

- 1 tsp salt (flower of salt)
